Ginger and Cranberry Raw Bars
This is my favourite raw bar recipe for a couple of reasons, it's a fairly healthy treat and it requires no baking- great for those summer months, when the house doesn’t need warming up any more than necessary!
1 cup pitted medjool dates 1 cup almonds 1 cup cashew nuts ¼ cup pepitas ¼ cup sunflower seeds ¼ cup linseeds ¼ cup psyllium husk 2 cm fresh ginger grated ½-1 cup dried cranberries 2-5 tbsp of water until the mixture has started reach a dough like consistency.
If you like it more gingery, then add more ginger.
Chuck all of the above, except the cranberries and water in to a high powered blender and blend on full speed until the texture is quite fine.
Add the following: ½-1 cup dried cranberries 2-5 tbsp of water until the mixture has started reach a dough like consistency.
Remove from the blender and place on a piece of baking paper. Fold the baking paper over the mixture and using a rolling pin, roll flat until it is about 1 cm thick. If you want to make it look all neat and pretty, chop the rough edges off, and re-roll until you get a nice neat rectangle.
Place in the fridge for a couple of hours, then remove and cut into squares. Try not to scoff in one sitting.
